Strawberry Struesel Muffins with Cream Cheese Filling

I was on the hunt to make the perfect strawberry muffin recipe. A lot of muffins turn out so plain. These are perfect. With the juices from the strawberries, cream cheese filling and crumb topping–you will have a winner!

 Ingredients List

Streusel Topping Ingredients:

  • 3/4 cup sugar
  • 3/4 cup flour
  • 1 tablespoon water
  • 1 1/2 teaspoons cinnamon
  • 1/4 cup butter, softened

Strawberry Muffins Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 cups chopped fresh strawberry’s

 Cream Cheese Filling Ingredients:

  • 4 ounces Cream cheese, softened
  • 2 tablespoons Butter, softened
  • 1/2 cup confectioners’ sugar
  • 1/3 cup granulated sugar
  • 2 tbsp beaten egg 
  • 1 teaspoon vanilla extract

Heat your oven to 400 Degrees.

Streusel Directions: Let’s make the Streusel!  Mix all ingredients until you have a crumb mixture 3/4 cup sugar, 3/4 cup flour, 1 tablespoon water, 1 1/2 teaspoons cinnamon, 1/4 cup butter, softened

Step 1: Mix together your dry ingredients: 1 3/4 cups all-purpose flour, 2/3 cup granulated sugar, 2 teaspoons baking powder


Step 2: Mix all of your wet ingredients: 1/2 cup milk, 1/2 cup butter, melted, 2 eggs, beaten, 1 teaspoon vanilla extract

Step 3: Slowly add in your dry ingredients


Step 4: Chop your strawberries. Yield: 2 Cups IMG_1536Step 5: Mix your cream cheese ingredients together: 4 ounces Cream cheese, softened, 2 tablespoons Butter, softened, 1/2 cup confectioners’ sugar, 1/3 cup granulated sugar, 2 tbsp beaten egg, 1 teaspoon vanilla extract


Step 6: Line your muffin tin with muffin liners. I always spray the entire pan with cooking spray to prevent any sticking when the muffins bake. Layer your muffin dough into the pan. (1) Add approximately 2 tablespoons of your muffin batter to each lined muffin tin (2) Add in a generous amount of strawberries (I used about 4-5 full slices) (3) Add in about 1/2 tablespoon of the cream cheese mixture and top with 1 table spoon of your batter (4) Add 2 1/2 tablespoons of the struesel topping (Tips from the Cook: If you want over-the-top muffins, add 3 1/2 full tablespoons of your struesel. Pile it on top and I know it SEEMS like a lot! This will give the restaurant-quality look. Don’t worry if it pours over the pan. If you sprayed it with cooking spray, it won’t stick).

Bake in your oven at 400 Degrees for 20-25 minutes. I popped mine out at 20 minutes and they had a great gooey center. Stick a toothpick in the center and if it comes out clean, they are done. Let your muffins cool before you remove them from the muffin pan (about 10 minutes).
